Wine And Dine


The party is over, but you're left with a glass of white wine which you just couldn't stomach anymore. Oh, and there's also that lousy bottle of red wine which someone had brought but no one cared to touch. What on earth are you supposed to do with them? It is a scenario  I had to face very often when I was studying in Britain six years ago, where there really wasn't much to do except for the students to take turns to cook and entertain each other in the hostel.

Then, as a poor, impoverished student, I never threw anything edible away. As far as possible, I finished the perishables and recycled the rest. But wine is not my tipple of choice. I'm more of a beer than wine person, and because my mother never cooks with wine, I do not know how to do it either. Until I learnt in Leeds from my hostel-mates, who hailed from all over the world, including Taiwan, Japan, Greece, Lebanon and Canada. Thanks to them, I never had to dump leftover wine - I simply kept them for the next dinner party.

Here Are Three Idiot-Proof Recipes

Wine Apple

What Ingredients Are Needed

  • Two Fuji apples, peeled and cut into small pieces.
  • 4 tablespoons sugar.
  • 1/2 cup red or white wine.
  • Whipped cream or ice cream.

How To Get Started

  • Peel apples, cut into small pieces and place them into a microwave-safe container.
  • Add sugar and wine.
  • Cover and microwave on high heat for about 10 minutes, turning once.
  • Chill and serve with whipped cream or ice-cream.

Stewed Beef

What Ingredients Are Needed

  • 600g beef cubes
  • 1 large carrot, cut into chunks
  • 1 clove garlic, chopped finely
  • 2 onions, 1'/2 to be cut into wedges, rest chopped finely
  • 2 tomatoes, chopped finely
  • 200g button mushrooms
  • 1 piece bay leaf
  • 3 tablespoons flour
  • 1 bottle red wine
  • 2 tablespoons butter
  • Salt and pepper
  • Cooking oil

How To Get Started

  • Dry beef cubes with paper towel and coat lightly with flour. Fry till almost cooked and remove from pan.
  • Fry chopped onion and garlic, then put beef back into the pan. Add wine and tomatoes and simmer for an hour on low heat, stirring occasionally.
  • In another pan, fry the onion wedges, mushrooms and carrots with butter. Add these to the beef and cook for another 10 minutes.

Sauteed Salmon

What Ingredients Are Needed

  • 4 slices salmon
  • 1/z cup white wine
  • 1/2 lemon, thinly sliced
  • Pinch of salt and pepper
  • Flour
  • Cooking oil

How To Get Started

  • Marinate the salmon in white wine, lemon, salt and pepper for an hour.
  • Coat the salmon lightly with flour, heat some oil and pan fry over medium heat.
